Yields 10 guests
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Combine all the ingredients in a pot, bring to a light boil, mixing so the sugar melts. After that, take off the burner allowing it to cool down fully. Decant into a sterilised bottle, close it and store chilled, it will last for around one month.
To make Batch Mix: Mix the specified spirits and syrup in a sizeable container, leave to sit for 60 minutes, then filter it preferably using a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml from the premix to a stirring glass filled with ice, gently stirring lightly for about 60 seconds to chill. Strain to a frosted cocktail glass or a similar vessel, top with the cranberries and complete it using a brief mist of the essential oil over the drink.
